BUTTER CLAMS on the half shell, trout roe, chicken cracklins, tiger’s milk, schmaltz
BEEF TONGUE sea urchin, cactus, seaweed, green salsa
TIRADITO black cod, yuzu ponzu
WEDGE SALAD seared butter lettuce, tomato, creamy dressing
